Baked Eggs with Kale Recipe

I am an egg lover. Ever since I brought home my first hens I have been obsessed with finding all of the ways of making them into scrumptious dishes. Usually, you don’t have to try very hard – eggs just don’t need to be dressed up too much. A little cream goes a long way. Keeping it simple really pays off and will still impress. And this Baked Eggs with Kale Recipe is a perfect example of that.

I also have to add that the way I cooked the kale is by far the best way I’ve cooked it ever. Adding the broth and even the pinch of salt is key and really, the only way to make it if you ask me! I also love Dino Kale and think it’s superior to other kinds I’ve tried, but that is just personal preference.

Baked Egg with Kale

 

Baked Eggs with Kale Recipe

Ingredients
  • Eggs (however many you would like!)
  • 1 Tablespoon Cream per Ramekin
  • 2 Tablespoons Olive Oil
  • 2 Cloves Garlic
  • 1 Bunch Dino Kale
  • ¼ Cup Vegetable Broth
  • Salt and Pepper to Taste
  • 2 Sprigs Fresh Rosemary
  • 2 Sprigs Fresh Thyme
  • Grated Parmesan (enough for a sprinkling over each ramekin)

Instructions
  1. Preheat oven to 350 degrees
  2. Wash and chop kale, herbs and garlic
  3. Heat oil in frying pan on medium low heat
  4. Add garlic, stir
  5. Add kale and broth
  6. Stir in a dash of salt and pepper
  7. Add herbs
  8. Cook for about 7 minutes, until wilted
  9. Add 1 tablespoon cream to each ramekin
  10. Crack one egg in each ramekin
  11. Add kale mixture
  12. Sprinkle with grated parmesan
  13. Place ramekins on cookie sheet
  14. Bake for 20 minutes, don’t let the yolk cook all the way through

    This is too, too delicious looking! I need to make this dairy free. Kale + eggs = LOVE!
