If you sterilize your cans and lids before pouring in the strained infusion, you should be good to keep it for months in a cool, dark place (doesn’t have to be the fridge, but why not?). I’ve heard 3 months to years with 80 proof liquor. I’d worry most about keeping the jars sealed between use, as oxidation would be your only enemy.
