Berry Chocolate Avocado and Yogurt Cupcakes Recipe

I’m calling these cupcakes because I put Cream Cheese Frosting on them. They’re indulgent, but in a good-for-you kind of way. Because they’re trying to be healthy. And, compared to many a cupcake, they totally are. And you can’t even tell. I replaced the butter/eggs/oil/milk with Avocado and Yogurt, added some berries and distracted the kids with the chocolate and frosting, all while cutting down the sugar by 1/2 of most cupcakes! This Berry Chocolate Avocado and Yogurt Cupcakes Recipe will please everyone in the house – even Dad who knows there is -gasp- an avocado in the mix.

Berry Chocolate Avocado and Yogurt Cupcakes

Ingredients
  1. 1 Ripe Avocado
  2. 1 Cup Yogurt
  3. 1/2 Cup Sugar
  4. 1/2 Cup Unsweetened Baking Cocoa
  5. 1 Teaspoon Vanilla Extract
  6. 1 Tablespoon Raspberry Extract
  7. 2 Cups Flour
  8. 2 Teaspoons Baking Powder
  9. 1/2 Teaspoon Baking Soda
  10. 1/2 Teaspoon Salt
  11. 1 Cup Fresh Berries (If using frozen, rinse with water, drain and pat dry)
Instructions
  1. Preheat oven to 375 degrees
  2. Line muffin tin with paper baking cups
  3. In a mixer, cream avocado, yogurt, sugar and cocoa
  4. Add extracts
  5. Sift flour, baking powder, baking soda and salt
  6. Mix on high
  7. Hand fold berries into the mix
  8. Fill almost to top
  9. Bake for 30-35 minutes
  10. Let cool, remove
